Indonesian cassia cinnamon sticks beside a bowl of ground cinnamon powder

Korintji cassia, grown on the slopes around Mount Kerinci in Jambi, is the benchmark Indonesian cinnamon. Its thick bark, sweet-hot profile and dependable oil content have made it the standard input for the North American and European spice trade for decades. We supply it as sticks, quills, broken bark and ground powder.

Grading

Indonesian cassia is graded on bark thickness, colour uniformity and cleanliness. Korintji A and AA are the thickest, cleanest and most uniformly coloured, and command the premium; KB and KC grades carry more colour variation and are typically destined for grinding or extraction where appearance matters less than oil content.

Quality control

  • Bark harvested from trees of at least seven years for full oil development
  • Shade-drying followed by controlled sun-drying to protect volatile oil
  • Steam sterilisation available for buyers with microbiological limits
  • Full analysis per lot: moisture, volatile oil, total and acid-insoluble ash
  • Coumarin content reported for buyers subject to EU limits

Powder specification

Ground cinnamon is milled to order — most buyers take 60 to 80 mesh — and packed immediately in lined bags to retain aroma. Because cassia powder loses volatile oil during storage, we mill against confirmed orders rather than holding ground stock.
